Monday – back to work and daycare after a great weekend! The weather is beautiful and yesterday we were enjoying the outdoors all day from 11am to 7pm. We found (literally) a “new” bike for Noah (it had just been put on the side of the street to give away) Just the right size between the one he’s had since last year and the one we have in the basement which will be perfect in a couple of years – and this bike has 5 gears! Though still a little big, Noah has been on that bike all weekend and ended up with a big blister after changing gears incessantly!
I got fly tickets to go home to Denmark on vacation for one month in June! It’s been way to long since I last visited family and friends, and it’s been 3 years since I last had Noah with me. He hardly remembers anything, but is SO exited to go on a plane and take a long travel with mom
I’m really looking forward to it! And not to worry – Little Cool Toys will remain open at all times, orders will be processed by hubby who we leave behind with Pasha, our dear little cat.
It’s almost 20 hours travel each way which can be pretty tough. I’ve bought a used Nintendo Lite for Noah to keep him occupied (just have to buy a couple of games and get to know it myself before we leave) I will also bring an activity booklet and some crayons – any suggestions to other easy to bring along toys/activities for a 5 year old?? – was thinking about a little box of Lego Constructor, but there are so many small pieces to loose that it’s probably not a great idea …
I would love to hear if you have any experience from traveling long distance with an active boy of 4-6 years old!
Prepared a bread dough this morning – should be ready for lunch
and decided to make some muffins as well. I recently found an awesome recipe for healthy cookies which are easy to bring a long and make a great substitute for store bought müsli bars – and so much better! I will post the recipe later. This time I went for ordinary muffins which are not so nutritious, but they can still be an ok snack depending on the ingredients – I tried to make them a tad healthier substituting and adding a few things:
MUFFINS:
50 g butter
2 eggs
150 g sugar (I would cut that to 100-125 g)
175 g flour (I used 75 g oats and 100 g flour)
2 tsp baking powder
lemon zest from 1/2 a lemon (didn’t have lemons, but added about 2 tsp of cinnamon instead)
1 dl milk
I added about 75 g of dark chocolate and a couple of tbsp of flax seeds (gave the muffins a nice crunch). A graded carrot could also have been a good addition.
Melt the butter. Whisk eggs and sugar until light. Mix the dry ingredients and stir it in together with the melted butter and milk. Spoon the dough into 12 muffin tins and bake at 200 C for 12-15 min.
Let cool a bit and enjoy
In case you wonder what my little Maileg mouse is doing in the middle of the photo – she just happens to love muffins and couldn’t wait to grab one …
